→ Cream Filling

12 - 3/4 cup unsalted butter, softened (170 g)
13 - 2 cups powdered sugar, sifted (240 g)
14 - 1 jar marshmallow creme (about 7 oz / 200 g)
15 - 1 teaspoon vanilla extract
16 - Pinch of salt

# How to Make It:

01 - Preheat oven to 350°F and line two baking sheets with parchment paper.
02 - In a medium bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
03 - In a large bowl, beat sugar, butter, and vegetable oil until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
04 - Alternate adding the dry mixture and buttermilk to the wet ingredients, beginning and ending with the dry mixture. Mix until just combined.
05 - Drop 2-tablespoon-sized mounds of batter onto prepared baking sheets, spacing them 2 inches apart.
06 - Bake for 10 to 12 minutes, until cakes spring back lightly when touched. Cool on sheets for 5 minutes, then transfer to a wire rack to cool completely.
07 - Beat softened butter until smooth. Gradually incorporate powdered sugar, then mix in marshmallow creme, vanilla extract, and salt. Beat until light and fluffy.
08 - Spread or pipe filling onto the flat side of half the cakes. Top with remaining cakes to form sandwiches.
09 - Refrigerate assembled pies for 30 minutes to set the filling and improve texture.

# Expert Tips:

01 -
  • They're soft and tender in a way that makes you feel like you're eating a cloud made of chocolate.
  • The marshmallow filling is impossibly fluffy without being overly sweet, which means you can eat more than one without guilt.
02 -
  • Don't skip cooling the cakes completely before filling them, or the filling will melt and slide off in a sad puddle.
  • The marshmallow creme is essential—it's what transforms this from frosting into that signature light, airy filling that makes whoopie pies different from any other sandwich cookie.
03 -
  • Use real butter in the filling for a richer taste; shortening works in a pinch, but butter wins every time.
  • Don't skip sifting the powdered sugar—it makes the difference between a smooth filling and one full of little hard lumps.
