# How to Make It:

01 - Heat vegetable oil in a large skillet over medium-high heat. Add cabbage, carrots, mushrooms, green onions, and garlic. Cook while stirring for 4-5 minutes until vegetables soften.
02 - Add bean sprouts, soy sauce, and sesame oil. Stir-fry for another 1-2 minutes. Remove from heat and let cool slightly.
03 - Place a spring roll wrapper on a clean work surface with a corner facing you. Spoon 2 tablespoons of filling near the bottom corner. Fold up the bottom, tuck in sides, and roll tightly. Seal the edge with a little water. Repeat with remaining wrappers and filling.
04 - Preheat air fryer to 390°F for 3 minutes. Lightly brush or spray rolls with oil. Arrange spring rolls in a single layer in the air fryer basket, working in batches if needed.
05 - Air fry for 8-10 minutes, turning halfway through, until golden and crisp.
06 - In a small saucepan, combine rice vinegar, water, sugar, and sweet chili sauce. Bring to a simmer, stirring to dissolve sugar. Add cornstarch slurry and cook while stirring until thickened, about 1 minute. Remove from heat and let cool.
